Step 1: Marinate the Chicken
- Begin by mixing the soy sauce, vinegar, rice wine, honey, brown sugar, grated ginger, and minced garlic in a bowl. This creates your teriyaki marinade. Place the chicken in a resealable plastic bag or bowl, pour the marinade over it, and let it sit for at least 15 minutes. For the best flavor, consider marinating it for an hour, if you have time.
Step 2: Prepare for Cooking
- While the chicken is marinating, gather everything else. Mix cornstarch and water in a separate bowl to create a slurry. Set this aside as it will help thicken your sauce while cooking.
Step 3: Cook the Chicken
- Heat the olive oil in a non-stick skillet or wok over medium-high heat. Add the marinated chicken and cook for about 8–10 minutes. You want the chicken to turn golden brown and no longer pink in the center.
Step 4: Add the Sauce
- Once the chicken is cooked, pour in the marinade and bring it to a gentle simmer. Keep an eye on it, giving it a few stirs.
Step 5: Thicken the Sauce
- After a couple of minutes, add the cornstarch slurry to the skillet. This will cause the sauce to thicken quickly. Stir continuously to avoid lumps. The sauce should glaze the chicken nicely within a minute or two.
Step 6: Garnish and Serve
- Once everything is well coated and bubbling, remove the skillet from heat. Plate your teriyaki chicken and sprinkle with sesame seeds and chopped green onions for a pop of flavor and color.
