This dish is not only easy to whip up, but it’s also a creamy, comforting delight that everyone seems to love. 
I’ve experimented with numerous variations, but this version stands out for its simplicity and flavor. Spoiler alert: you may want to make it again and again!

Ingredients
  

  • 1 tablespoon extra virgin olive oil
  • 3 garlic cloves, finely chopped
  • 1 can petite diced tomatoes 15 ounces
  • 12 ounces cheese-filled tortellini
  • 3 cups fresh spinach, roughly chopped
  • 1 tablespoon mixed Italian herbs
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups cups heavy cream
  • 1 tablespoon fresh basil, chopped
  • 1/4 cup freshly grated Parmesan cheese

Method
 

Step 1: Heat the Pan
  1. Start by placing a large skillet over medium heat. Add the extra virgin olive oil, allowing it a moment to warm up. This step is crucial for infusing the oil with flavor and ensuring your garlic doesn’t stick.
Step 2: Sauté the Garlic
  1. Once the oil is hot, add in the finely chopped garlic. Sauté for about 1-2 minutes until it’s fragrant. Keep a close eye; you don’t want it to burn!
Step 3: Add Tomatoes
  1. Next, pour the can of petite diced tomatoes into the skillet. Stir well to combine and let the mixture simmer for about five minutes. This allows the tomatoes to break down and mingle with the garlic for a robust base.
Step 4: Toss in the Tortellini
  1. Now it's time for the star of the show! Add the cheese-filled tortellini. Pour in enough water to just cover the pasta. Bring the mixture to a gentle boil, and cook according to package instructions, usually about 7-10 minutes.
Step 5: Incorporate Spinach
  1. Once the tortellini is tender, toss in the chopped spinach. Stir it in gently, letting it wilt down into the mixture. This should take 2-3 minutes. The vibrant green color will brighten up your dish.
Step 6: Create the Sauce
  1. Lower the heat, then add the heavy cream, mixed Italian herbs, sea salt, and black pepper. Stir everything together, allowing the sauce to thicken slightly, about 3-5 minutes.
    Adjust salt and pepper to taste.
