I have a confession to make: I absolutely adore pasta. It's one of the reasons I enjoy creating satisfying and easy recipes. This shrimp Alfredo recipe stands out because it balances indulgence with wholesome ingredients. It’s simple to whip up on a busy weeknight, yet fancy enough to impress guests or celebrate special occasions.

Ingredients
  

  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 2 cups heavy whipping cream
  • cup white wine I recommend Ste Chapelle Chardonnay, about $6
  • cup Parmesan cheese, grated
  • Salt and pepper S&P
  • Sprinkle of paprika
  • Parsley or basil for garnish, if desired

Method
 

Step 1: Prepare the Pasta
  1. Start by boiling a large pot of salted water. Once it reaches a rolling boil, toss in the fettuccine (or penne, if that's your preferred pasta). Cook according to the package instructions. For the ultimate texture, aim for al dente. After cooking, don’t forget to reserve a cup of that starchy pasta water for later!
Step 2: Sauté the Aromatics
  1. In a large skillet over medium heat, melt the unsalted butter. Once melted, add the chopped onion and a pinch of salt. Allow it to sauté for about 3-4 minutes until it starts to soften. Then, toss in the minced garlic. Oh, the smell of sautéing onion and garlic is simply irresistible! Cook it for an additional minute, letting those flavors meld together.
Step 3: Add the Shrimp
  1. Now, it's time for the star of the show—our shrimp! Season them with a little salt and pepper before placing them in the pan.
  2. Cook for about 2-3 minutes per side until they turn pink and opaque. Make sure not to overcook them to avoid the dreaded rubbery texture. They’re delicate little treasures and should be treated as such!
Step 4: Create the Sauce
  1. Once the shrimp is cooked, pour in the white wine to deglaze the pan. This will lift any flavorful bits stuck to the bottom. Allow it to simmer for a couple of minutes until reduced slightly. Then, add the heavy whipping cream, stirring continuously. Soon, you’ll have a dreamy, creamy sauce.
Step 5: Combine Pasta and Sauce
  1. At this point, stir in the cooked pasta, tossing it to coat thoroughly in that luscious sauce. If the sauce seems too thick, you can add some of the reserved pasta water to reach your desired consistency.
Step 6: Add the Finishing Touches
  1. Finally, stir in the grated Parmesan cheese. Season with salt, pepper, and a sprinkle of paprika for color. Give it a final toss and watch as everything melds into a magnificent creation. If you’re feeling fancy, sprinkle some fresh parsley or basil on top for an eye-catching finish.

Notes

Heavy Whipping Cream

This ingredient is key to achieving that creamy texture in Alfredo sauce. It adds richness and smoothness that light cream simply cannot match.

Parmesan Cheese

Grated Parmesan adds flavor and depth. It’s crucial to use high-quality cheese for the best results. Freshly grated cheese tends to have a more vibrant flavor than pre-grated versions.

Shrimp

Using fresh or frozen shrimp is acceptable. If using frozen shrimp, thaw them in the fridge overnight to ensure they're ready to go when you need them.

Olive Oil

While butter is my go-to for flavor, olive oil can be added for a hint of Mediterranean flair. It's rich in healthy fats and complements the dish wonderfully.
