Method
Step 1: Prep Your Turkey
- Start by patting the turkey breast dry with paper towels. This step is important; moisture on the surface can lead to a mushy exterior. Once dry, place the turkey breast on a roasting pan breast side up.
Step 2: Create the Seasoning Mixture
- In a bowl, combine the minced garlic, thyme, lemon zest, kosher salt, brown sugar, black pepper, and smoked paprika. Mix well.
Step 3: Add the Butter
- Soften the butter and mix it with your seasoning blend until well combined. This mixture not only flavors the meat but also helps in crisping the skin.
Step 4: Rub the Mixture on the Turkey
- Gently lift the skin of the turkey breast and rub some of the butter mixture directly onto the meat. Don’t forget the sides! Once that’s done, spread the remaining mixture all over the outside of the turkey breast.
Step 5: Roast the Turkey
- Preheat your oven to 350°F (175°C). Place the turkey breast in the oven and roast it for about 1.5 to 2 hours. A meat thermometer is your best friend here; the internal temperature should reach 165°F (74°C) for safe consumption.
Step 6: Rest Before Slicing
- After roasting, let the turkey sit for at least 15 minutes before slicing. This patience pays off as it keeps the juices intact.
Step 7: Make the Gravy
- In the meantime, use the pan drippings to create a savory gravy. In a small saucepan, whisk together flour and pan drippings. Add in chicken or turkey stock gradually, stirring until the gravy reaches your desired consistency.
Notes
- Brining: For extra moisture, consider brining the turkey overnight. This helps to tenderize while imparting flavor.
- Tent with Foil: If the skin browns too quickly, loosely cover it with aluminum foil to avoid burning.
- Use a Meat Thermometer: Trust the thermometer, not the cooking time. It’s the fastest way to avoid undercooking or overcooking your turkey.
- Resting Time: Do not skip resting the turkey. It’s essential for juicy slices.
- Experiment with Flavors: Don't hesitate to add spices or herbs you enjoy or have on hand. Rosemary, sage, or even a hint of citrus can add a lovely twist.
