  • 1 medium red onion, sliced into wedges
  • 1 yellow bell pepper, julienned
  • pounds chicken breast, boneless and skinless, sliced into thin strips
  • 3 tablespoons extra-virgin olive oil
For the spice blend:
  • 2 teaspoons ancho chili powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons ground cumin
  • 2 teaspoons dried Mexican oregano
  • ½ teaspoon onion powder
  • Kosher salt and freshly cracked black pepper, to taste
Flavorful boost:
  • 1 teaspoon honey

Method
 

Step 1: Preheat the Oven
  1. Start by preheating your oven to 425°F (220°C). A hot oven ensures that the veggies roast beautifully and the chicken cooks evenly.
Step 2: Prepare the Chicken and Veggies
  1. In a large mixing bowl, combine the chicken strips, red onion, and all the bell peppers. This colorful medley is what makes fajitas so visually appealing.
Step 3: Seasoning Time
