Method
Step 1: Preheat the Oven
- Preheat your oven to 350°F (175°C). Starting with a hot oven is key to ensuring even cooking. You don’t want to place your dish in a cold oven and lose all that precious cooking time!
Step 2: Prepare a Baking Dish
- While the oven warms up, grab a 9x13-inch baking dish. Spray it with cooking spray or use a little butter. This will make for easy cleanup afterward and prevent sticking.
Step 3: Mix the Rice and Soups
- In a large bowl, combine the uncooked rice, onion dip mix, garlic powder, and thyme. Mix it well to ensure that the rice is evenly coated with the spices. Then, add in the cans of chicken-flavored and mushroom-flavored soups. Stir until it’s nicely blended together.
Step 4: Add Stock
- Now, pour in the chicken stock and mix it again. This will be your flavorful base. The rice will absorb all this delicious liquid as it cooks. It’s a win-win!
Step 5: Arrange the Chicken
- Layer the rice mixture evenly in the bottom of your prepared baking dish. Place the chicken breasts on top. You might sprinkle a little extra garlic powder or thyme directly on top of the chicken for added flavor.
Step 6: Cover and Bake
- Cover the baking dish tightly with aluminum foil. This step is crucial—do not peek! This creates steam that helps everything cook without drying out. Toss it in the oven for about one hour.
Step 7: Check for Doneness
- After one hour, carefully remove the foil. The chicken should be cooked through (165°F or 75°C). The rice should be fluffy and have absorbed the flavors of the creamy mixture. If you want a little color on top, you can pop it back in the oven for an extra 10 minutes uncovered.
Notes
- Use Fresh Ingredients: Opting for fresh herbs instead of dried can elevate the flavor.
- Swap the Rice: While long-grain rice is recommended, jasmine or basmati can add an aromatic twist.
- Experiment with Proteins: You can substitute chicken with turkey or even fish.
- Check for Seasoning: Add salt and pepper according to your taste before popping it in the oven.
- Make It Veggie-Friendly: Toss in some frozen vegetables before baking for added nutrients and color.
