Ingredients

  • 14 oz Andouille smoked sausage, sliced
  • cups cups low-sodium chicken stock
  • 1 tablespoon vegetable oil
  • 1 cup uncooked long grain white rice
  • 1 medium bell pepper, diced
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon cayenne chili powder
  • 1/8 teaspoon freshly ground black pepper
  • 1 dried bay leaf

Method

Step 1: Sauté the Sausage
  1. In a large skillet over medium-high heat, add the vegetable oil. Once hot, toss in the sliced Andouille sausage.
  2. Sauté until browned, which should take around 5 to 7 minutes. You want that beautiful caramelization for deeper flavors. Feel free to use a spatula to break it up a bit as it cooks.
Step 2: Add the Vegetables
  1. Next, add the diced bell pepper and cook for another 3-4 minutes until softened. The vibrant colors will make you smile!
  2. Throw in the sliced green onions, garlic, and sauté until fragrant, around 1 minute. Just imagine the aroma filling your kitchen—so good!
Step 3: Incorporate the Rice and Seasonings
  1. Stir in the uncooked rice, Worcestershire sauce, smoked paprika, oregano, thyme, onion powder, cayenne pepper, and black pepper. Ensure the rice is coated well with the seasonings as it will absorb all that flavor while cooking.
Step 4: Add Tomatoes and Chicken Stock
  1. Pour in the fire-roasted diced tomatoes with their juices along with the chicken stock. Give it a gentle stir, allowing everything to blend. Toss in the bay leaf. It might seem like a lot of liquid, but trust the process.
Step 5: Bring to a Simmer
  1. Increase the heat to high until the mixture comes to a boil. Once boiled, reduce the heat to low and cover the skillet with a lid. Let it simmer for about 20-25 minutes.
  2. This step transforms the dish into a wholesome meal as the rice absorbs the liquid.
Step 6: Check & Serve
  1. After the time is up, remove the lid and check that the rice is tender. If there’s any extra liquid, let it cook uncovered for a few minutes until it evaporates. Discard the bay leaf before serving. Now, plate it up and savor the flavor explosion!

Notes

Here are some valuable tips to elevate your skillet dish even further:
  • Opt for High-Quality Sausage: Good sausage can change the entire dish. Seek out authentic Andouille for that classic flavor.
  • Don’t Rush the Browning: Take your time when sautéing the sausage. The nice brown bits at the bottom of the pan help build flavor.
  • Adjust the Heat: Spice levels vary between sausages. Start with a small amount of cayenne; you can always add more!
  • Customize with Veggies: Feel free to add other vegetables like zucchini or corn for extra color and nutrition.
  • Let it Rest: Let the skillet sit off the heat covered for a few extra minutes once it's done. This allows the flavors to meld together.
