  • 1/2 tsp sea salt

Buffalo Sauce
  • 1 tsp apple cider vinegar
  • 1/2 tsp garlic granules
  • 4 Tbsp unsalted butter
  • 1 tsp Worcestershire sauce
  • 1/2 cup Frank’s RedHot Original Sauce

  1. Now, let’s dive into the process of creating these mouthwatering wings!
Step 1: Prepare the Chicken Wings
  1. First, start with fresh or thawed chicken wings. Pat them dry with paper towels. This ensures they crisp up nicely during cooking. Place them in a large bowl and season with cornflour, garlic, smoked chili paprika, white pepper, neutral oil, regular paprika, cayenne, sea salt, dried thyme, and cracked black peppercorns.
  2. Toss them until well coated and let them sit for about 30 minutes. This resting time allows the flavors to mingle.
Step 2: Fry the Wings
  1. In a deep pot, heat oil to 375°F (190°C). Carefully add the chicken wings in batches, ensuring not to overcrowd the pot.
  2. Fry them for 8-10 minutes or until they turn golden brown and crispy. Use a slotted spoon to remove them from the oil and drain on paper towels.
