Today, I’m going to share my go-to simple pasta salad recipe, complete with chickpeas, colorful veggies, and a homemade Italian dressing that will keep your taste buds dancing.

Ingredients
  

  • 1 package uncooked spiral pasta
  • 1 tablespoon fresh basil, chopped
  • 1 tablespoon dried Italian herbs
  • 1 bottle of tangy Italian vinaigrette
  • 2 medium cucumbers, diced
  • 6 medium tomatoes, diced
  • 1 bunch scallions, chopped
  • 4 ounces freshly grated Parmesan
  • 1/4 cup black olives, sliced

Method
 

Step 1: Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the spiral pasta and cook according to package directions until tender but still firm to the bite. 
    Drain the pasta and rinse it under cold water to stop the cooking process. This really makes a difference in texture!
Step 2: Prep Your Veggies
  1. While the pasta is cooking, chop your veggies. Dice the cucumbers, tomatoes, and scallions, and don’t forget to slice those olives too. The fresher, the better!
Step 3: Mix the Salad
  1. In a large bowl, combine the cooled pasta, chopped vegetables, and chickpeas. Toss everything together gently.
Step 4: Dress It Up
  1. Drizzle the Italian vinaigrette over the salad mixture. Add freshly chopped basil and dried Italian herbs. The dressing brings everything to life!
Step 5: Add Cheese
  1. Sprinkle in the grated Parmesan cheese and gently mix until everything is evenly coated. This step really enhances the flavor profile and adds that cheesy goodness.
Step 6: Chill and Serve
