Ingredients

  • 1 lb carrots, peeled, washed, and cut into 1-inch chunks
  • 2 Tbsp light brown sugar
  • 1/4 tsp fine sea salt
  • 1/2 tsp ground cinnamon optional, for warmth
  • 2 Tbsp unsalted butter, melted
  • 2 Tbsp extra-virgin olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp roasted garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1 tsp lemon zest optional, for brightness
  • Freshly chopped parsley optional, for garnish
  • 1/4 cup finely grated Parmesan cheese optional, for richness

Method

Step 1: Prepare the Carrots
  1. Start by peeling and washing your carrots. This is where the magic begins. Cutting them into uniform 1-inch chunks helps them cook evenly. You want bite-sized pieces that will fit nicely into your air fryer basket.
Step 2: Season the Carrots
  1. In a large bowl, combine your carrots with melted butter, olive oil, brown sugar, salt, cinnamon, smoked paprika, and garlic powder. Give everything a good toss. The butter and oil will help the seasonings stick while providing a nice, rich flavor.
Step 3: Preheat the Air Fryer
  1. If your air fryer requires preheating, go ahead and set it to 375°F (190°C) for about 5 minutes. Preheating helps achieve that beautiful caramelized texture.
Step 4: Air Fry the Carrots
  1. Once preheated, place the seasoned carrot chunks in the air fryer basket. Be careful not to overcrowd them. Cook for about 15-20 minutes, shaking the basket halfway through. This ensures even cooking and browning.
Step 5: Finish and Serve
  1. When the carrots are fork-tender and have a lovely golden color, remove them from the air fryer. If you’re feeling fancy, sprinkle some grated Parmesan cheese and fresh parsley right before serving.

Notes

Cut Evenly: Making the carrot pieces uniform ensures they cook evenly. No one wants some crunchy and some mushy pieces!
Experiment with Flavor: Don’t hesitate to play around with spices. Try cumin for a warm earthiness or a hint of cayenne for a kick.
Check for Doneness: Cooking times can vary based on the thickness of your carrot chunks. Always check them a few minutes early.
Don’t Overcrowd: Giving space in the air fryer allows hot air to circulate. This helps in achieving that perfect crispy crust.
Chill Before Serving: Letting them cool slightly before serving makes them easier to handle and enhances their flavor.
